Zucchini Crusted Pizza
Zucchini Crusted Pizza
 
31/2 cups coarsely grated zucchini
3 eggs beaten (or 2 egg whites and 1 whole egg)
1/3 cup flour
½ cup low fat grated mozzarella
½ cup grated parmesan
1 TBS fresh or dried basil
salt & pepper
 
Preheat oven to 350 degrees
 
Salt the zucchini in a colander and let stand for 15 minutes. Then press out all excess moisture.
Combine all crust ingredients and spread into an oiled 9x13 inch baking pan. Bake 20-25 minutes or until the crust is dry and firm. Spray with oil and broil for 3-5 minutes.
Spread with tomato sauce and add your choice of fresh toppings. (mushrooms, black olives, peppers, onions, etc.) And top with mozzarella. Bake for about 25 minutes.
  
 

Cauliflower Cheese Pie

With grated potato crust….prep time 2 hours with baking

 

CRUST

2 cups packed, grated raw potato

½ tsp salt

1 egg beaten

¼ cup grated onion

Heat oven to 400. Set freshly grated potato in a colander over a bowl. Salt and leave for 10 minutes. Then squeeze out the excess water, add to the remaining ingredients. Pat into a well-oiled 9-inch pan, building up the sides of the crust with lightly floured fingers. Bake for 40-45 minutes, until browned. After the first 30 minutes, brush or spray the crust with a little oil or Pam to crispen it.

Turn oven down to 375.

FILLING

1 cup grated cheddar cheese

I medium cauliflower, broken into small flowerets

1 medium clove garlic, minced

1 cup chopped onion

3 TBS butter

dash thyme

½ tsp basil

½ tsp salt

2 eggs, ¼ cup milk, black pepper & paprika….beaten together

Sauté onions & garlic, lightly salted in butter for 5 minutes. Add herbs and cauliflower and cook covered, 10 minutes, stirring occasionally. Spread half the cheese into the baked crust, then the sauté, then the rest of the cheese. Pour the egg mixture over and dust with more paprika. Bake 35-40 minutes, until set and browned.
